Kaiseki cuisine is prepared by the owner-chef using plenty of seasonal ingredients.
The owner is very particular about his ingredients.
He selects carefully fresh fish,
buys vegetables directly from the production area and his specialty
is the handmade 100% buckwheat noodles that change every month.
Bamboo vessels made from Moso bamboo cut out from the bamboo grove
on the premises are also handmade by the owner.
